Savory is an aromatic, low-growing plant with many green, oblong leaves. The taste of dried savory is reminiscent of a combination of the herbs and spices: thyme, mint and marjoram. Add it to a dish as last to retain the most flavour! Store in a cool, dark and dry place.

Recipe for Roman savory sauce

Ingredients:

  • 1 teaspoon savory
  • 1/2 teaspoon pepper
  • 1/2 teaspoon lovage leaf
  • 1/2 teaspoon coriander
  • 1 egg
  • 1 teaspoon vinegar
  • 1 teaspoon olive oil

Preparation:

  1. Boil the egg until it is hard-boiled.
  2. Take out the yolk, you will only need this part for the sauce.
  3. Grind the herbs in a mortar.
  4. Mash the egg yolk and mix it with the vinegar and oil.
  5. Stir in the herbs.
    Playing with the proportions changes the taste of the sauce.
    • more savory makes it fresher
    • more coriander gives it zest
    • more lovage leaf makes it saltier.
    • You may want to add some chopped onion.
  6. Boil the sauce briefly to thicken it and then serve over fish or meat.
