Many different types of peppers are part of the Capsicum family, which includes peppers as well as the hot and spicy varieties, often referred to as chili peppers or chilli peppers.
What types of peppers and chillies are there?
Peppers come in all shapes and sizes. Let's start with large peppers which come in a rainbow of colours (green, red, orange, yellow and more). Because of their size and mild-sweet flavour, they are perfect for stuffing, but they are also incredibly versatile and add flavour to any dish in which they are used.
From the peppers we move to the hotter varieties such as the Italian fry pepper called. This light greenish-yellow pepper is long, has a slight wrinkle on its thin skin and is widely used in cuisines of Cuba, Puerto Rico and the Dominican Republic.
Cherry peppers or Pimento (or Pimiento) are red, heart-shaped peppers that are mild, sweet and smell like a chased red bell pepper. They are usually found in jars and can add a sweet pepper flavour to a dish similar to roasted red peppers.

Warn about the heat of spicy chilies
Be warned that the heat can still vary from pepper to pepper, so one jalapeño may taste milder compared to another. And a quick tip for those who can't handle the heat: have some dairy, like yogurt or milk, to counteract the spicy heat. If you want to limit the spiciness, remove the pepper seeds and whitish ribs before using.
