Using spelt flour to make couscous

Couscous couscous is coarsely ground durum wheat (groats). But you can also make couscous from spelt flour. This Couscous is therefore made from 100% whole wheat Spelt flour. The process to make couscous from spelt flour is with that of Durum Wheat. Water is added to the spelt flour and the mixture then goes into a rotating drum, which makes the small recognizable couscous balls. The couscous is then boiled, dried and air-cooled.

Why Coucous from Whole Wheat Spelt Flour?

The grain fiber has not been extracted from whole wheat flour. As a result, important vitamins, fibers and minerals remain in the flour. It is healthier than flour with the grain fiber removed. In addition, couscous from Spelt flour contains more unsaturated fats and fiber than durum wheat flour. Finally, all coucous is rich in carbohydrates. Your body is supplied with energy.

Sensory differences between durum couscous and Spelt couscous

There are 3 important differences:

• Spelt couscous has a typical Spelt odor
• Spelt couscous has a typical Spelt taste
• Spelt Couscous grains are elastic and not floral or sticky. They are easily meltable.
