Applying coriander
Grind coriander seeds in a mortar or crush them with the rounded side of a spoon. To get the most out of the spicy, slightly sweet flavour of coriander, you can first roast the bulbs in a pan without oil or butter. Then use it in meat, fish and vegetable dishes, soups and sauces. Make your own curry or curry spice mixtures and conjure up the most delicious Indian dishes. Coriander is also delicious in bread dough or pastry and can be used as a flavouring in pickling and preserving vegetables.
Recipe carrot salad with organic coriander seeds for 4 people
Ingredients
- 450 grams of carrots
- 2 teaspoons coriander seeds
- 30 millilitres vinegar
- 1 small onion
- 1 small apple
- 2 garlic cloves
- 1 teaspoon salt
- handful of walnuts
- cayenne pepper
- olive oil
Preparation method
Peel and grate the carrots and apple. Peel and slice the onion. Make a marinade of vinegar and some salt. Put the grated carrot and apple in a large bowl and pour the marinade over them. Mix well, so that the salad is well coated with marinade. Leave to marinate for at least 3 hours. You can also leave it in the fridge overnight. After marinating, the carrots have often created a layer of water in the bowl. Scoop this out. Heat some olive oil in a pan and fry the onion. Allow to cool and pour the oil through a sieve over the bowl of marinated carrot and apple. Keep the onion slices covered in the fridge and use for another dish. Roast the coriander seeds in a dry pan and then crush them lightly in a mortar or with the rounded side of a spoon. Chop the walnuts coarsely and the garlic very finely. Add the coriander, garlic, walnuts and a pinch of cayenne pepper to the salad and mix well.
