Can you imagine it? You are cycling on a hot summer's day through the leafy landscape of North Limburg, past the farmers' fields where, in row after row of soil mounds hidden under plastic, the famous white gold is making its way to heaven. Asparagus!

And although the asparagus is primarily known in the Netherlands as a delicacy from Limburg, it is actually found throughout Europe along coastal areas and by lakes and rivers. The oldest known evidence of human consumption of the asparagus plant is found in the pyramid of Sakkara in Egypt (2750 BC).

3 types of asparagus

There are white, green and purple asparagus. Actually it is all the same asparagus, only the moment they are harvested is different.

• White asparagus are 'cut' when they have not yet grown above the ground. In this way they have not yet had a chance to absorb sunlight and turn green. White asparagus is less bitter and much softer than green and purple asparagus.
• Green asparagus was given time to grow in the sun and become green through photosynthesis.
• Purple asparagus had the longest time to colour above the ground.

Because cutting white asparagus is a labour-intensive activity, white asparagus is also much more expensive than other vegetables. That is why it is nicknamed "the white gold".

A low-salt vegetable

White asparagus contain very little salt and nevertheless have their own characteristic flavour. They are therefore popular with people on a low-salt diet.

• magnesium

• fibre
• protein
• vitamin C
• vitamin E
• vitamin K
• folic acid
• the amino acid asparagine

The use of Asparagus powder

Asparagus is a real seasonal crop. You can only buy fresh asparagus from the end of April to the end of June. Fresh asparagus can only be kept for a limited time, so they are often frozen. But frozen asparagus are not as tasty as fresh asparagus. To keep the taste better you can also make powder of it.

Asparagus powder is an indispensable ingredient for making cream sauces and soups. You can also add a little of it to smoothies. Or use it as a substitute for some of the flour in baking breads and cakes for an interesting flavour. You can also add a unique flavour profile to pasta dishes when you add a teaspoon of asparagus powder to your recipe.
